This must be one of the easiest cakes I've ever made ... Or at least it would have been, had the morning not been a comedy of errors. First up the butter I was melting in the oven (no I don't have a microwave) tipped and spilled as I went to get it out. Interesting upside is that melted butter apparently makes a great cleaner when wiped off the bottom of a hot oven. Who knew. Of course my oven now smells like butter every time it's turned on. Then I completely forgot to put said butter … [Read more...]
Summer Fruit Platter Smoothie
Ok, ok, so you're probably not going to make a fruit platter for the sole purpose of throwing it all in a blender. BUT if you were to make a fruit platter for a bbq and end up with leftovers once the festivities ended, throwing it all in a blender the next day would be the perfect solution to reclaiming your fridge shelf back. That said, 'Leftover Fruit Platter Smoothie' didn't quite have the same ring to it, so 'Summer' won. On the other hand if you had a crowd for breakfast … [Read more...]
Macadamia & Coconut Choc-Cherry Truffle Bites
Truffle bite? What's a truffle bite? Things are truffles or bites, right? And truffles are rarely more than a bite anyway so calling something a truffle bite is like calling a cat a kitty cat or saying something is an end result or even better (worse?) declaring that you're going to an ATM machine. I'll wait while you google what ATM stands for, swear to never again use the phrase "mix together", and re-evaluate the sheer scale of redundancies in everyday life... Ok, so maybe a truffle … [Read more...]
Pecan Oat No-Bake Pie Crust {GF VG DF SF Paleo}
Look at me go, no posts for ages then bam, there I am in your inbox or reader or feed two days in a row. Pie will do that. Of course another Pumpkin Pie meant another pie crust (heaven forbid I double up and repeat one) and somehow pecans and oats just seemed the way to go. I should have probably called it a Pecan Oat Raw Pie Crust, but there are arguments about the raw-ness of rolled oats so no-bake was just as easy. And to be honest this crust is a bit like taking a pecan … [Read more...]
In My Kitchen: November 2014
It’s once again time for In My Kitchen and as per usual this is a collection of things from the past month — as seen over on Instagram — in loosely interpreted categories and no particular order. As always I’m linking up with Celia for IMK. ------ Kitchen Shenanigans Keeping myself amused with stripy kitchen string while brownies cool enough for their Christmas shoot... ------ All the green things from the crisper (parsley/coriander/mint/kale/rocket/spinach), end of the road … [Read more...]
Vegan Pineapple Pancakes & Spiced Rum Caramel Syrup
I'm really quite well behaved when dining in public. I know which bread plate and glasses are mine (bread on the left, wine and water on the right) and to keep my napkin on my lap until vacating the table at the end of the meal. I'm well versed in what cutlery to use for what course (start from the outside and move in, thank you very much Pretty Woman) and where to place said cutlery to indicate I've finished (handles at 5 o'clock, fork tongs up to the ceiling or down to the plate depending … [Read more...]
Oatmeal Cookie Dough Bites {Raw, Vegan, Nut-Free, Gluten-Free}
Oatmeal cookies were one of my favourite things growing up. Our go-to recipe was the one on the top of the rolled oat canister -- not the current one or the one before that but the one that existed back in the 80s and to this day still lives on a cardboard cut-out in my mom's recipe box. We always made them with raisins. Those soft, chewy cookies were a special treat, but the best part of baking them was eating the raw dough straight from the bowl. It's been ages since I've made … [Read more...]
