Another one from the archives, a salad made and shot last September -- after Cape Cod and before our road trip -- at mom's farm. Moroccan Quinoa, Avocado & Orange Salad
I mentioned in my last post that I'd received a crate of oranges recently, and rather than just eating one each day I challenged myself to do something different with them all. I was so pleasantly surprised with some of the combos I came up with and this salad was one of my faves. Rocket, Parsley & Pepita Pesto
Necessity is the mother of invention and this pesto is the result of a last ditch rescue mission in my crisper. There are a few of those happening lately. A Spaghetti Squash - more on that later - purchased from the same stand as those tomatillos, steamed up. A couple of frozen mackerel filets, pan fried.
