There is a saying in Australia - 'does what it says on the tin'. This is that, but without the tin. It is - depending on your hemisphere, the end or beginning of - winter, there is kale, and beans. Voila we have soup. I used proper dried white beans since I knew in the morning I wanted to make it for dinner, but canned works just fine. Kale is perfect but silverbeat, chard, or any dark leafy green would be just as good. Same deal wth the veggies - feel free to clean out the crisper. After … [Read more...]
Delicious Power Crackles | Guest Post
About now we are somewhere on Route 66 - taking the long way from Kansas City to Chicago because we can. So how, you may ask, have I had time to bring you these little morsels of goodness? Cue the magic of the blogging community! You may know Christina as one of my co-hosts for the monthly Sweet Adventures Blog Hop, or perhaps as the co-chair of Eat.Drink.Blog-2012 or maybe just from her own gorgeous blog The Hungry Australian, but today she's here to visit. A few months back I did a guest … [Read more...]
Activated Almonds, Walnuts & Brazil Nuts
I had that look in my eye. The slightly crazy one that says I am getting hangry, keep all hands away from the cage lest you lose a finger... Soothing words uttered in dulcet tones do not help this hungry/angry low blood sugar situation - well unless those words are 'here is some food to eat'. Nor does distraction - unless distraction is delivered as food. Are you catching on? Needless to say, I have learned over the years to never be without snacks. Nuts, apples, carrots - they float … [Read more...]
Cauliflower & Broccoli Soup with Garlic Chips
I've been churning out the soups this winter. I make a huge pot on the weekend and take it for lunch pretty much every day for the next week. Sometimes I have it with bread, other times I stir through a handful of beans or some cooked quinoa or brown rice. This soup is amazingly creamy for having no cream in it. The garlic and oil make it a little bit fancy. ~~~ Creamy Vegan Broccoli & Cauliflower Soup INGREDIENTS: 1 brown onion, diced 1 large or 2 medium cloves garlic, peeled … [Read more...]
Paleo Coconut & Berry Cobbler
Things have been a bit more frantic than usual lately... I know, hard to believe, but we are leaving on an extended holiday in just over 24 hours and the amount of general stuff left to do is astronomical. RJ is up to his elbows in spreadsheets, I am knee deep in laundry - about 90% of it clean at least, and 'thank goodness we have one more day' was uttered a minimum of 10 times yesterday. Uh-oh, we no longer have another day - yikes. On the upside, almost all of the flights are booked - … [Read more...]
Finnish Emergency Bread – Hätäleipä & Truffle Butter
When I met RJ he used to eat at least 4 slices of white bread a day. Not necessarily as part of a meal mind you, but just because. Toast for breakfast, toast before dinner [no matter what or when dinner was], bread with dinner. Sliced, white, from a plastic bag, every time. It appalled me just a bit - as did putting ketchup/tomato sauce on beef stew but we'll save that one for later... *waves at RJ* hi mate, yes, I'm talking about you again - haha. I was not allowed white bread growing up. … [Read more...]
Baked Citrus Custard
I tried, I really did. I wanted to make the Blood Orange Baked Custards from Kate Bracks 'The Sweet Life' as she intended them to be. They looked and sounded lovely. Then I shivered at the white sugar and the cream and, surprise, surprise, changed it up. What I ended up with however was lovely and light enough for breakfast [yeah, I went there] but special enough for after dinner too. You can always see the original recipe here if you want to go full fat and full … [Read more...]
