A pie filling as luscious and decadent as Raw Banana Cream Pie needed an equally special crust. Dates are nature's caramel after all so it isn't too far a leap to see the dates + sea salt = salted caramel connection. How's that for a raw replacement fix? Add in buttery macadamias and a few other secret ingredients and we have a pie crust made in heaven. Don't forget to pop over to the Raw Vegan Macadamia & Coconut Banana Cream Pie post to check out the rest of the creations in the … [Read more...]
Raw Banana Cream Pie & Whipped Coconut Cream
The full royal moniker of this creation is Raw Vegan Macadamia & Coconut Banana Cream Pie, but in the interest of daily conversation, a shortened version was necessary for public appearances. Yeah, I just compared Price William Arthur Philip Louis Windsor - aka Wills - to a Banana Cream Pie, it happens. And honestly, this luscious creation should be the future king of Pie-land, so it works. In any case, few months back I discovered that Banana Cream Pie is apparently the favourite … [Read more...]
Smokey Chilli-Lime Hummus
My kitchen blender dramas have been well documented, but if you missed the various rants, in short at the end of last year both my immersion hand blender and mini-food processor went on to the big kitchen in the sky. As a result, for a little while I was without any way to make drinks, soups, spreads and cheesecake. First world problem? Yes, of course. But I do live in a first world country, and we do like our weekend smoothies. In any case, KitchenAid was kind enough to send me a hand … [Read more...]
Roasted Tomatillo Salsa Verde
Of the things I miss most from America-land, proper Mexican food is pretty close to the top of the list. I crave the staff lunches made by the Mexican woman who was a prep chef in a Denver restaurant where I waited tables. The dark, 20+ ingredient mole poblano, the spicy rice, the salsas, the fresh vegetables, the hot tortillas. It was fresh and clean and filling. My eyes glaze over when I think about the road-side shops in Mexico where a $1.50 fish taco comes out of the kitchen as a … [Read more...]
Asian Mixed Mushroom, Kale & Soba Noodle Soup
A few years back I spent 10 days in Japan with a girlfriend from collage. We trekked around Tokyo, did the hot springs local-style in Hakone, got caught in a blizzard, navigated public transport, said sumimasen a thousand times and ate more soba noodles than you could imagine. When I got home I never wanted to see a noodle or a piece of sushi ever again... or so I thought. About three weeks later it was all I could think about. My insistence on 'must have soba like in Japan' led us to … [Read more...]
Vegan Chocolate Fudge, PLUS 11 flavour twists
Chocolate always wins. It really isn't fair to everything else - the noodle soups, the sides, the dips, the salads - always take second at best. Poor fried rice, you can come to my house any day. Ok, so what am I on about? You see, I have an enormous backlog of posts... While I do enjoy the picture editing and post writing, I'd rather create and cook and photograph over anything else, and as I'm at home during the day most of my meals get styled and propped before being eaten. So over the … [Read more...]
Spiced Quinoa Apple Crumble
I don't believe in feeling guilty about eating dessert. A slice of cake or scoop of ice cream or stack of cookies should bring a smile to your face not a grimace or bad feelings. However I understand that the guilt felt by many about overeating sweets is not aimed at the sheer pleasure of the act, but the ingredients contained within the treat - or the physiological result of the activity. Sugar highs and crashes, tummy troubles and far too many bad calories are forever associated with … [Read more...]
