I always used to smirk at those “10 things to do with leftover wine” lists, because who ever has leftover wine? But I somehow became that person who rarely drinks more than one glass in a go, and all of a sudden if a bottle of wine was opened there was almost always a couple of glasses left over.

Then one day I horrified a girlfriend (who is a brand manger for a wine company, so rightfully horrified by bad wine habits) by sharing that I was known to re-cap and refrigerate said open bottle in order to have another glass a few days later…

The next time I saw her she brought me a lovely red and made me promise to drink it for no more than 2 days after it was opened (even that seemed to pain her terribly – ha!), and under no circumstances store it in the fridge.

Needless to say I had to find a solution for leftover wine fast. Spiced poached pears (both baked into a cake and spooned over crepes) are an easy answer, but it was smack dab in the middle of summer and not only were pears not in season but it was dreadfully hot. Sangria emerged quite quickly as the obvious solution — and making it in popsicle form wasn’t far behind.

Now, if you’re a non-drinker, want to make these for the kids, or never *ever* have leftover wine, it’s an easy sideways step to virgin sangria — simply replace the wine with unsweetened pomegranate juice or strong freshly brewed hibiscus tea — and probably a much more responsible choice if you’re prone, as I am, to eating popsicles for breakfast…

Summer Sangria Popsicles

Fresh and fruity, these sangria popsicles are just the thing to spice up a hot summer day (whether you're using leftover wine or not)!

Serves: 12 - 15 popsicles
INGREDIENTS
  • 1 cup red wine (or unsweetened pomegranate juice or strong hibiscus tea)
  • 1 cup apple juice
  • 1 tsp vanilla extract or paste
  • 1 cinnamon stick
  • 3/4 cup fresh squeezed orange juice
  • 1 white peach
  • 1 cup watermelon - cubed
  • 1 Tbsp fresh mint - chopped
METHOD
  1. In a saucepan over medium heat, bring wine (juice/tea), apple juice and the cinnamon stick to a boil. Simmer 1 minute then remove from heat, stir through vanilla and refrigerate until cool. 

  2. Thinly slice peach (peel first if you prefer) and layer into popsicle moulds with watermelon and mint. Divide orange juice across popsicle moulds.

  3. Remove cinnamon stick from cooled sangria mixture and discard. Divide sangria across popsicle moulds (pouring the liquid over the back of a spoon will encourage it to float on top of the oj instead of mixing in) leaving a half-cm of space at the top for expansion.

  4. Freeze 45 min to an hour then insert sticks. Freeze at least 4 hours or overnight.

COOK'S NOTES & SUBSTITUTIONS
  • Feel free to add a shot of brandy or rum to the pan with the wine and apple juice. You can also sweeten the popsicles slightly by adding a Tbsp of maple syrup too. Don't add too much of either though, as both alcohol and sugar reduce the ability of liquid to freeze.
  • To un-mould popsicles, run cold water over the outside of the mould for a few seconds
  • To peel peaches, cut a shallow X in the base, drop into boiling water for 30 seconds then remove and plunge into ice water. The skin should peel right off from the X upwards.

I took this video on Jan 1. I even wrote a caption I took this video on Jan 1. I even wrote a caption and everything. And I intended to post it that day as a reflection moving into a new year. But instead, mom and I went out for pizza and wine, and then it was Jan 2, and so on and so on.

So instead you’re getting it on Feb 1. A new day and another new month (but what is a new month or a new year, other than a societal convention really).

Because, each day, each sunrise, we have the opportunity to start anew - no matter how big or little that start may be. A chance to take another step forward - no matter how many steps back you feel you’re fighting against.

Whether this past year brought blinding joy or paralysing grief (and in whatever measure of balance or imbalance), I hope each new day sees the landscape of your life look one step closer to what you imagine it to be. And that when the waves roll in and change that landscape, you can roll with it and see the beauty and possibility on the other side.

When the middle little insisted on buying quail eggs over Christmas, but due to allll the other food we never cooked them, I simply couldn’t let the little guys go to waste.

Could I have made one dish? Of course. Did I instead prepare quail eggs four ways, bake mini loaves of brioche, make mini waffles, dig through the prop closet for the smallest dishes, and set up an entire table? Of course I did.

My go-to pizza topping combo 🍕 Made on that dou My go-to pizza topping combo 🍕 Made on that dough from a couple weeks ago and voiced by the middle little (who is about as different from her younger sister as you can get!) 💥.

Sometimes this combo gets prawns too 🍤. Most of the time I don’t bother mixing the ingredients in a bowl and just layer them on top. The cheese is a hard goat cheese (because I can’t do 🐄). The ‘spices’ 🌱 is Sicilian oregano. The measurements are random at best - a handful of this, a splash of that.

If you have a fave veggie or seafood pizza combo I’d love to hear it. Because as Ms.S says, voila, yummy yummy pizza!
