I started you off slowly with rainbow purees in porridge then moved on to a green as it gets smoothie with sweet, sweet potato gems but now it’s time to go straight from the crisper to the table — are you ready?
There’s almost no prep required for the veg in this bowl meaning you’re up and out in no time at all. Now you may get a few side-glances from partners or workmates but feel free to give them a smug smile and continue eating your breakfast in peace. Confidence is a terribly disarming trait — ha!
Carrot & Zucchini Muesli Bowl
Grating fresh veg into muesli is a great way to add texture and nutrition. Give it a go, I dare you.
INGREDIENTS
- ¾ cup toasted muesli or granola
- handful grated or spiralised zucchini
- handful grated or spiralised carrot
- sliced strawberries
- fresh or frozen blueberries
- generous dollop coconut cream or yoghurt of choice
- milk of choice, optional
METHOD
Combine granola, carrot and zucchini. Top with remaining ingredients.
COOK’S NOTES
- If you’re not a fan of raw zucchini or carrot, blanch it briefly in boiling water then drain well before adding to your granola.

I’m kind of stuck on my oatmeal with cinnamon, Apple and pecans. It’s a big deal if I run out of apples and have to substitute with peaches or blueberries. I guess I just need an ounce of predictability in my day, especially before my coffee. Maybe I could try these for lunch or dinner!
