There is every chance this recipe looks familiar. Perhaps like a recent smoothie?

But when something works you may as well ride that wave as far as it goes.

Especially when the wave tastes as good as these do.

Yes, you can use whatever leftover fruit you have lying around. Yes you can add juice or coconut milk or champagne. Yes you can eat them for breakfast.

Leftover Fruit Platter Smoothies

Leftover Fruit Platter PopsiclesYou’ll want to make your fruit platter twice as big as you need it just so you can make these with the leftovers. Yes, really. 

INGREDIENTS

  • 2 cups mixed fruit
  • ¼ c coconut milk (or any other milk/non-milk type liquid)
  • 1 Tbsp lime juice
  • 1 cup ice cubes

METHOD

Blend fruit, lime juice and coconut milk, add ice and blend again until smooth.

Pour into popsicle moulds (these are my favourite but there was no room in my freezer the day I made this recipe so I used a smaller set) and freeze 30 – 45 mins until sticks will stand up on their own.

Insert aforementioned sticks and freeze till solid.

COOK’S NOTES

  • Popsicles in the photos were made from a strawberry, watermelon, plum, mango, honeydew and grape smoothie.
