Green Papaya Quinoa Salad

Some posts here are planned. Recipes dreamt up, sometimes over days or weeks, inspired by a weekend brunch outing or an overseas trip or a rainbow memory. Primped and polished and put on show as if there were a method to the madness.

Others however are a result of a hazy vision — a quick fix driven by a craving and combined with whatever happens to be languishing the fridge at the very moment I want lunch.

This is one of those.

Green Papaya Quinoa Salad

You see, at some point back in March I had a papaya craving. Not just any craving mind you but one for sweet ripe wedges sprinkled with a bit of chilli and doused with lime juice — because the weather was still warm enough to pretend a tropical holiday was knocking on the door and it seemed right to celebrate.

The local grocery store however was not so accommodating, and instead had on display a lovely selection of not-quite-ripe-enough-to-be-sold-as-ripe fruit.

Enter a pointy tropical holiday memory of green papaya salad on a beach in Thailand a few years ago, a fridge of fresh herbs leftover from some recipe testing, a bit of quinoa from dinner the night before, a jar of dried chillies that seems to reproduce on its own.

In no time at all the spice and tang I was craving were sorted but in the process so was the need for a proper lunch rather than a perpetual afternoon grazing session, how terribly convenient.

As an added benefit it ended up so pretty I simply had to take a few photos before devouring the entire plate. The unplanned recipes are almost always edible, but sometimes they win hands down.

Green-ish Papaya & Quinoa Salad

Green Papaya Quinoa SaladThis is not a traditional Thai Green Papaya Salad, it is however the perfect quick-tangy-spicy fix, and a great way to tart up leftover quinoa. Feel free to add shredded carrots, cucumber, snake beans or green beans and roasted peanuts if you wish.

Serves 2 (or 1, whatever…)

INGREDIENTS

  • ½ large green (or red but firm and not quite ripe) papaya
  • 1 c cooked quinoa
  • 2 handfuls coriander leaves, torn
  • 2 handfuls mint leaves, torn
  • 1 red chilli, sliced
  • 1 Tbsp lime juice
  • 1 tsp tamari or soy sauce
  • 1 tsp rice syrup or maple syrup or palm sugar
  • dash fish sauce, optional but recommended

METHOD

Peel papaya and scoop out seeds. Shred or thinly slice into a large bowl.

Warm cooked quinoa in a hot pan with a touch of oil and a splash of water, stirring until heated through.

Toss quinoa, torn herbs and sliced chilli through the shredded papaya.

Whisk together lime juice through fish sauce, drizzle over salad and serve immediately.

COOK’S NOTES

  • Fish sauce is optional but encouraged if you have it on hand. Leave it out for a vegetarian or vegan version, adding a pinch of sea salt to taste.
  • I swear by my julienne peeler for shredding pretty much any fruit or vegetable, if you don’t have one get one asap!

    I agree JJ! Although usually I make them at night and only make enough for dinner so end up with shocking photos.
    Now speaking of shocking photos/improving them…. when are you going to let me in on your backdrop creating secrets? I am getting desperate!

    This is beautiful JJ, what a lovely post. I can’t believe this was just a result of fridge-scrounging (but then again, I did the same fridge scrounge for dinner last night and ended up with a full Mexican meal. It’s amazing how much stuff can be made with some inventiveness!). I love green papaya. I made a green mango salad a couple of months ago also… Asian dressings do so much for firm and underripe fruit! xx

    Quick meals that end up being both beautiful and tasty are always the best! Makes you feel extra competent being able to whip up something from the fridge without all the planning, doesn’t it? Beautiful write up and images 🙂

I took this video on Jan 1. I even wrote a caption I took this video on Jan 1. I even wrote a caption and everything. And I intended to post it that day as a reflection moving into a new year. But instead, mom and I went out for pizza and wine, and then it was Jan 2, and so on and so on.

So instead you’re getting it on Feb 1. A new day and another new month (but what is a new month or a new year, other than a societal convention really).

Because, each day, each sunrise, we have the opportunity to start anew - no matter how big or little that start may be. A chance to take another step forward - no matter how many steps back you feel you’re fighting against.

Whether this past year brought blinding joy or paralysing grief (and in whatever measure of balance or imbalance), I hope each new day sees the landscape of your life look one step closer to what you imagine it to be. And that when the waves roll in and change that landscape, you can roll with it and see the beauty and possibility on the other side.

If you’ve made it this far, congratulations, have a cookie 🍪 And I’ll leave you with the rolling waves and blue sky of a California beach in January. I truly hope this year sees us all grow stronger and move forward with each new day. Going backwards is simply not an option.

When the middle little insisted on buying quail eggs over Christmas, but due to allll the other food we never cooked them, I simply couldn’t let the little guys go to waste.

Could I have made one dish? Of course. Did I instead prepare quail eggs four ways, bake mini loaves of brioche, make mini waffles, dig through the prop closet for the smallest dishes, and set up an entire table? Of course I did.

My go-to pizza topping combo 🍕 Made on that dou My go-to pizza topping combo 🍕 Made on that dough from a couple weeks ago and voiced by the middle little (who is about as different from her younger sister as you can get!) 💥.

Sometimes this combo gets prawns too 🍤. Most of the time I don’t bother mixing the ingredients in a bowl and just layer them on top. The cheese is a hard goat cheese (because I can’t do 🐄). The ‘spices’ 🌱 is Sicilian oregano. The measurements are random at best - a handful of this, a splash of that.

If you have a fave veggie or seafood pizza combo I’d love to hear it. Because as Ms.S says, voila, yummy yummy pizza!
