Easter Egg Salad Wraps

It was the same drill every year, a holiday tradition involving whomever was at our house on Easter morning. It started when we were small enough to believe that gifts and treats were left by a mystical figure while we were sleeping, and continued well into our early adult years when we knew who really left the gifts, but didn’t care because surprise and anticipation held enough of a shimmery charm to continue the charade.

Before we appreciated the allure of sleeping late, my brother and I would wake up at some un-godly hour, sit at the top of the steps trying to peek – unsuccessfully – downstairs, while nagging incessantly and ever more loudly at our parent’s bedroom door until they relented and got out of bed.

Later on they would have to drag us awake sometime before mid-day, but the reveal dance was always the same. Lined up on the top landing – sometimes oldest to youngest sometimes the other way around – we would all traipse down the staircase in our pajamas to see what kind of goodies had been left during the night.

Easter morning was filled with pastel plastic Easter grass, festive baskets, far too much chocolate and fluffy stuffed animals. One year there was even a gorgeous little black bunny, although he liked chocolate a bit too much for his own good… big tip, keep leftover Easter candy away from hoppy bunnies… ahem.

Anyway, after the basket contents were fully examined it was time for the Easter Egg hunt! Our colourful dyed eggs from the previous day had been diligently hidden overnight by the Easter Bunny – in plain view of course – and N and I had already spotted our first targets well before the flag dropped.

There was much rushing around, an occasional dive or push and plenty of gloating as our masterpieces were located under chairs and behind pillows and inside pot-plants. Of course once the excitement was over there was always one egg missing and we’d have to go through it all over again until it was located.

As we grew up the stuffed animals ceased, the quantity of chocolate went down while the quality went up, and the hidden hard-boiled eggs were traded-in for florescent plastic ones. The hunt moved to the backyard out of respect for the furniture and as the plastic eggs had been filled with single dollar bills we were even more driven to get as many as we could hold.

While the plastic eggs could be conveniently packed away a day or two after Easter, for years we had to find something to do with all those leftover hard-boiled ones — I may have insisted on dyeing them even when they were no-longer used in the hunt… These lightened-up Easter Egg Salad Wraps are the perfect solution.

Easter Egg Salad Wraps

Easter Egg Salad Wraps

Don’t let all those colourful hard-boiled Easter eggs go to waste! This quick, lightened-up egg salad wrap is the perfect solution.

INGREDIENTS
  • 8 hard-boiled eggs
  • 3/4 cup thick natural or greek yoghurt
  • 1/4 cup chopped parsley
  • 1/4 cup diced cucumber
  • 1 large pinch sea salt fresh cracked pepper
  • 1 tsp whole grain or dijon mustard (optional)
  • 1 tsp Sriracha or other hot sauce (optional)
To serve
  • flat-bread wraps
  • lettuce leaves
  • sliced avocado
METHOD
  1. Peel and roughly chop eggs. Scrape into a bowl and gently stir through other ingredients (yoghurt through salt plus any optional extras).

  2. On a piece of flat-bread layer lettuce, egg salad, avocado, lettuce. Roll up and secure, cut in half if using large wraps.

COOK'S NOTES & SUBSTITUTIONS
  • Make it dairy free: Substitute the yoghurt with 3/4 c mashed avocado + 1 Tbsp lemon juice or apple cider vinegar.
  • Make it low-carb: Wrap egg salad and avocado in large lettuce leaves.

    I still like to keep up the charade JJ! The Easter Bunny now takes requests and like yours, the quality has improved. We don’t have a hunt but there was always a mess of eggs left by the bunny. It would be hard to keep all the eggs in the basket while you’re hopping around.

    Whoah you had the best childhood ever! I only ever participated in one easter egg hunt in primary school and I still recall it as being one of the best days ever! 😀

    Great idea for left over hard boiled eggs. We never really got into easter too much when I was growing up. My brother and sister are 8 and 11 years older than me… so I often felt like an only child.

    As kids we used to walk up the road and pick fresh long strands of grass and make nests out of it on a blanket laid out in the lounge room. Come easter morning our grass nests were overflowing with colourful dyed eggs and the foil wrapped chocolate variety. I was so much fun! We always ate the boiled eggs at breakfast with sliced ham, bread, shallots and horseradish. So delicious!

    We had very similar Easters growing up! I love that shot of the colored, peeled egg shells. So pretty. I love egg salad and I have to say that this is by far the most attractive egg salad presentation I’ve seen. Yum!

Apparently today is National Strawberry Day, it’ Apparently today is National Strawberry Day, it’s overcast and raining in LA (so a plate of sunshine is absolutely necessary), and if you’ve been here for more than a hot second you know how I feel about toast.

Toasted sourdough, goat chèvre (or vegan cream cheese), sliced strawberries, cucumber ribbons, fresh mint, olive oil, black pepper, just a pinch of salt. Go forth and feast.

I took this video on Jan 1. I even wrote a caption I took this video on Jan 1. I even wrote a caption and everything. And I intended to post it that day as a reflection moving into a new year. But instead, mom and I went out for pizza and wine, and then it was Jan 2, and so on and so on.

So instead you’re getting it on Feb 1. A new day and another new month (but what is a new month or a new year, other than a societal convention really).

Because, each day, each sunrise, we have the opportunity to start anew - no matter how big or little that start may be. A chance to take another step forward - no matter how many steps back you feel you’re fighting against.

Whether this past year brought blinding joy or paralysing grief (and in whatever measure of balance or imbalance), I hope each new day sees the landscape of your life look one step closer to what you imagine it to be. And that when the waves roll in and change that landscape, you can roll with it and see the beauty and possibility on the other side.

If you’ve made it this far, congratulations, have a cookie 🍪 And I’ll leave you with the rolling waves and blue sky of a California beach in January. I truly hope this year sees us all grow stronger and move forward with each new day. Going backwards is simply not an option.

When the middle little insisted on buying quail eggs over Christmas, but due to allll the other food we never cooked them, I simply couldn’t let the little guys go to waste.

Could I have made one dish? Of course. Did I instead prepare quail eggs four ways, bake mini loaves of brioche, make mini waffles, dig through the prop closet for the smallest dishes, and set up an entire table? Of course I did.

My go-to pizza topping combo 🍕 Made on that dou My go-to pizza topping combo 🍕 Made on that dough from a couple weeks ago and voiced by the middle little (who is about as different from her younger sister as you can get!) 💥.

Sometimes this combo gets prawns too 🍤. Most of the time I don’t bother mixing the ingredients in a bowl and just layer them on top. The cheese is a hard goat cheese (because I can’t do 🐄). The ‘spices’ 🌱 is Sicilian oregano. The measurements are random at best - a handful of this, a splash of that.

If you have a fave veggie or seafood pizza combo I’d love to hear it. Because as Ms.S says, voila, yummy yummy pizza!
