Spicy Carrot, Tomato and Lentil Soup

I love soup. I know, it’s a big statement. There is this little cafe downstairs from my day-job office. They are friendly, and they make a good cup of tea and they have soup at lunch….$8.50 soup. It does come with lovely bread, but really, $8.50? It is not any more expensive, and is actually at times cheaper, than any of the other cafes around.

This soup was inspired by one of their regular ones, and it is so simple I have made it twice already. As much as I used to call North Sydney the ‘land of the food court’, I miss the choices terribly, especially Altitude. Oh Altitude do you miss me like I miss you and your rice-paper rolls??

Also, winter is really getting to me this year. Despite having two, yes two doonas [duvet, comforter, whatever], and a blanket, and flannelette sheets on the bed, I am still wearing a cashmere jumper to sleep in [seriously way less posh than it sounds] and I am forever craving hearty warm meals.

Pureed Soup

At $8.50 a bowl I had to give this a go. If you don’t bother peeling carrots it’s even easier. A whole pot will be less than $8.50, even with all organic ingredients, and will give you a couple of meals easy. Plus you know exactly what is going into it. The first time I made this I pureed it with a stick blender, the second time I left it as it cooked, nice and chunky, it was beautiful both ways. It’s even better with avocado, some Chili Sauce and a dollop of greek yogurt.

Soup with Avo, Chili Sauce and Yogurt

Spicy Carrot, Tomato and Lentil Soup

Ingredients:

500g [1lb] carrots – approx 3 large or lots of small ones
1 large brown onion
1-2 cloves garlic
2 cans chopped tomatoes in juice*
3/4 cup dry French Green Lentils*
3 cans stock [or water with 2 tsp stock powder]
1 Tbsp Italian mixed herbs
1-2 tsp hot paprika [optional]
Olive Oil, Sea Salt and Cracked Pepper

Full Method in Under 100 words:

Roughly chop onion and garlic and saute on low in a splash of olive oil for two mins. Add roughly chopped carrots and saute for a further 3 minutes.

Add lentils and spices and stir for a minute or two to combine. Add tomatoes and stock and bring to a boil. Reduce heat and simmer for approximately 45 minutes until lentils are tender and soup is slightly thickened.

Season to taste with salt and pepper.  Blend to desired consistency or serve as is.

Serves 4-6

Notes:

  • French or Green Lentils are a bit heartier than some others, the red ones for example cook down to almost nothing in about 15 mins.  I find that the green ones stand up better in this soup, but they do take a bit longer to cook. Make sure to rinse them in cool water before using.
  • Try to get tomatoes with no salt, that way you can control it on your own. If all you have is ones with salt in them, you may want to substitute some of the stock for water – you can just add extra seasoning later if necessary.

    I stumbled upon this recipe, and I’m so glad I did, because I bought a giant bag of organic carrots and needed to used them up! It’s on the stove right now, smelling great. I can’t wait to try it!

    Hi, Tried your recipe and it is great. to make it into a main meal I added some small shell pasta. My husband did not mind, for once having soup as the main meal. Thank you this recipe will go in my best recipe box.

    Been eyeing this one for awhile and finally tried it today. Loved how easy it was. I didn’t have italian herbs so I replaced it with cilantro and coriander which was quite tasty. Would have liked if it was more spicy so I would add some more hot pepper next time. Thanks for posting!

    Making this today – thanks for tweeting me the link JJ. It will use about half of my 3L of frozen beef stock (!), as well as the kilo of carrots in the fridge and the over-ripe bag of tomatoes. AND the forecast for Brisbane for next week is cool and wet.

I took this video on Jan 1. I even wrote a caption I took this video on Jan 1. I even wrote a caption and everything. And I intended to post it that day as a reflection moving into a new year. But instead, mom and I went out for pizza and wine, and then it was Jan 2, and so on and so on.

So instead you’re getting it on Feb 1. A new day and another new month (but what is a new month or a new year, other than a societal convention really).

Because, each day, each sunrise, we have the opportunity to start anew - no matter how big or little that start may be. A chance to take another step forward - no matter how many steps back you feel you’re fighting against.

Whether this past year brought blinding joy or paralysing grief (and in whatever measure of balance or imbalance), I hope each new day sees the landscape of your life look one step closer to what you imagine it to be. And that when the waves roll in and change that landscape, you can roll with it and see the beauty and possibility on the other side.

When the middle little insisted on buying quail eggs over Christmas, but due to allll the other food we never cooked them, I simply couldn’t let the little guys go to waste.

My go-to pizza topping combo 🍕 Made on that dou My go-to pizza topping combo 🍕 Made on that dough from a couple weeks ago and voiced by the middle little (who is about as different from her younger sister as you can get!) 💥.

Sometimes this combo gets prawns too 🍤. Most of the time I don’t bother mixing the ingredients in a bowl and just layer them on top. The cheese is a hard goat cheese (because I can’t do 🐄). The ‘spices’ 🌱 is Sicilian oregano. The measurements are random at best - a handful of this, a splash of that.

If you have a fave veggie or seafood pizza combo I’d love to hear it. Because as Ms.S says, voila, yummy yummy pizza!
