So when the chestnuts showed up at my door I first had to work out what to do with them. I wanted to go beyond just chopping them up and adding them to something else. But what to use, and what to make? Pumpkin was top of mind and a quick search confirmed that the flavour would go well with chestnuts. I was determined to make a treat that was healthy and delicious. Chestnuts on their own are a fantastic source of nutrition - fibre, calcium, potassium, a bit of protein, no cholesterol … [Read more...]
Sweet Chestnut Puree & How to Cook Chestnuts
You may have noticed that I've been receiving some slightly unusual produce recently. It seems that many early autumn fruits are somehow often overlooked in favour of more common ones like pears and apples and it comes as a bit of a surprise that such a wide variety of items are in-season this time of year. Don't get me wrong, I do love my pears and apples, but a bit of variation is good for the soul - and the belly! Speaking of variation I recently received a box of chestnuts and the game … [Read more...]
Fluffy Blueberry & Spelt Vegan Pancakes
No matter how beautiful the view, it is always difficult living somewhere that is at least a 24hr trip away from family and friends. But it is always a bit more, obvious, when there's happy news, difficult times, special occasions and holidays which would otherwise be spent with those who are far away. Now on this weekend in many cities around the globe there are fun runs for Mother's Day. Sydney has the MDC each year and RJ and I have done it off and on over time, but growing up my family … [Read more...]
Barramundi with Passionfruit, Lime and Chili
When you have a huge basket of passionfruit staring at you, thoughts of cake and smoothies and ice cream toppings swirl around effortlessly. I started searching the internets for inspiration expecting nothing other than sweet treats but suddenly this brilliant idea appeared. It was an aside, a quick mention in the middle of a beverage post, but it caught my eye - … [Read more...]
Passionfruit & Coconut Self-saucing Pudding Cake
If passionfruit was a girl you wanted to set-up with your mate, you'd describe her as sweet, with a sharp sense of humour... and a great personality... Although 'normal' enough to begin with, they go wrinkly and a bit peculiar once off the vine for a bit. Cut them open and you are accosted by little finger like buds from which the uniquely flavoured pulp and edible seeds hang. But one … [Read more...]
Lemon Curd – rules and bending the rules
Lemon Curd is one of those recipes that everyone has a spin - and an opinion - on. You should use whole eggs, you must only use egg yolks. You must adhere to x ratios of sugar to juice to make it very sweet, you must keep it tart. Use more butter, use less butter - mix it in before, mix it in at the end. Cook in a saucepan, cook over a double boiler. Strain the juice, strain the cooked curd. And on and on it goes. The versatility once made is as varied as the list of recipe options. Fill … [Read more...]
Lemon, Lavender and Honey Chiffon Cake
I am a lemon girl all the way, always have been - only chocolate gives lemon any hope of an equal fight, and it still depends on the day! So I was completely on board when we chose Lemon for our April Sweet Adventures Blog Hop. I wanted to make a cake - Angel Food Cake to be exact - and spike it with copious amounts of lemon. But Angel Food Cake has the same issue as Meringue and Pavlova - lots and lots of sugar. Damn. My mind started spinning as per usual - maybe I could edit it... … [Read more...]
