It's no secret that I'm a bit of a porridge fan. I've been known to eat it for dinner as often as I do for breakfast -- because anytime is a good time for porridge if you ask me. Coconut, Ricotta & Cornmeal Tea Cake
This must be one of the easiest cakes I've ever made ... Or at least it would have been, had the morning not been a comedy of errors. First up the butter I was melting in the oven (no I don't have a microwave) tipped and spilled as I went to get it out. Strawberry & Blood Orange Frozen Margarita
There I go again, making summery, freezing cold treats in the dead of winter. Ironically this delectable beverage is, well other than the frozen bit, entirely seasonal. You see while strawberries are ripe for the picking (pun entirely intended) in NSW during late spring and early summer, they roll out of tropical Queensland by the tonne all winter long.
