Ok, ok, so you’re probably not going to make a fruit platter for the sole purpose of throwing it all in a blender.
BUT if you were to make a fruit platter for a bbq and end up with leftovers once the festivities ended, throwing it all in a blender the next day would be the perfect solution to reclaiming your fridge shelf back.
That said, ‘Leftover Fruit Platter Smoothie’ didn’t quite have the same ring to it, so ‘Summer’ won.
On the other hand if you had a crowd for breakfast you could put out a fruit platter and let everyone pick their own smoothie combo.
Now there’s an idea…
Summer Fruit Platter Smoothie
Give leftover fruit new life as a smoothie.
Serves 2
INGREDIENTS
- 2 cups mixed fruit
- ¼ c coconut milk (or any other milk/non-milk type liquid)
- 1 Tbsp lime juice
- 1 cup ice cubes
METHOD
Really? Ok…
Blend fruit, lime juice and coconut milk, add ice and blend again until smooth. Serve with extra lime.
COOK’S NOTES
- If you’re interested, the smoothie in the photo included strawberries, watermelon, plum, mango, honeydew and grapes.

Love the idea of a DIY smoothie bar! I really need to make myself a tiled backdrop. So pretty!
