A dose of refreshment on a hot day, a dose of sunshine on a rainy day — this frosty drink is as appropriate post-yoga as it is post-beach.
Another thing I’ve decided to do as part of my sticking with what works approach is to finally dig out recipes and pics from the past year or so that haven’t made it into posts yet.
This was shot — ironically enough almost a year ago to the day — using stunningly sweet new season berries and coconut water from a young coconut. I froze the fresh strawberries to make the drink thick and icy cold because that makes me happy.
It would be perfect with a shot of gin if that makes you happy… just saying.
Strawberry, Cucumber & Coconut Water Slushy
Fresh summer berries mingle with cool cucumber and salty-sweet coconut water for the perfect refreshment. Freeze the berries to make the slushy thicker.
Serves 1 – 2
INGREDIENTS
- 1 c strawberries, hulled
- 1 thinned skin (Lebanese) cucumber
- 1/2 c coconut water, or more to taste
- handful ice cubes
METHOD
Make sure all ingredients are cold. Peel half the skin from the cucumber if you wish. Freeze strawberries if you wish.
Blend and serve, adding a shot of gin if it makes you happy.
