Gluten-free Quinoa Cornbread

I’ve been a touch quiet ’round internet-land these past few weeks but there’s been lots happening in the background…

A few Dining Out posts, a few events, and a whole lot of design / editing / food photography for a new extremely fast turn around project has meant that this is not only the first recipe post in two weeks but the first thing I’ve cooked and photographed for my own purposes since those Almond Croissant Makeover treats. Phew.

Of course that meant I not only tackled one dish last night but two, it happens. The first – this Gluten Free Quinoa Cornbread – is inspired by my assigned blog for this month’s Secret Recipe Club. The second – a mushroom and kale soup – should provide badly needed sustenance for another impending crazy week, as well as a future post.

Flipping through the recipe index on my SRC assigned blog, So Tasty So Yummy, I was spoiled for choice! Katie’s wholewheat Chocolate Doughnuts were one of the first things to catch my eye, alas I have no doughnut pan (note to self, get a doughnut pan…) and while I could have made them in a muffin tin, where’s the fun in that?

Gluten-free Quinoa Cornbread

I got distracted by the Autumn Dinner Party, thinking how perfect it would be to share over on Seasonal Sunday Lunch, I contemplated the Portobello Mushroom Soup for dinner, but I kept going back to the Cornbread.

You could call this a very generously adapted reflection of the original, but honestly when do I stick to a recipe these days? Inspiration is everything and Katie’s cornbread is just the inspiration I needed.

Now please excuse me while I crawl back into a pile of work, at least there’s soup and bread to keep me going, and soon enough I’ll share what I’ve been up to… Have a great week!

Gluten-free Quinoa Cornbread

Gluten Free Quinoa Cornbread

Gluten-free Quinoa CornbreadCornbread, only different, but not.
Inspired by So Tasty So Yummy

Makes one 8 inch pan

INGREDIENTS

  • 1 c cornmeal (polenta)
  • 1 c cooked quinoa
  • 1/2 c quinoa flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp sea salt
  • 3/4 c corn kernels, fresh or frozen thawed
  • 1 – 2 jalapenos, finely diced, optional
  • 1 c almond milk plus 1 tsp lemon juice
  • 2 Tbsp rice syrup
  • 1/4 c olive oil
  • 1 egg

METHOD

Preheat oven to 180C (350F). Grease a square 20 cm (8 inch) cake tin, line base and two sides with a long strip of baking/parchment paper.

Mix together dry ingredients, cornmeal through jalapenos, breaking up any lumps. Whisk together wet ingredients, combine with dry and stir well.

Pour into prepared pan and bake for 30 mins until centre is firm and a toothpick comes out clean. Cool in pan 10 mins, run knife along unlined edges and turn out to cool completely.

Slice and serve with soup, or Vegetarian Black Bean Chili, or Guacamole, or even Choc Macadamia Spread. Or just eat large pieces while wrapped in a blanket on the lounge…

COOK’S NOTES

  • Sub almond milk with any other dairy or non-dairy milk you prefer
  • Sub rice syrup with honey or maple syrup but bread won’t be fructose free
  • Sub quinoa flour with buckwheat or spelt. Spelt flour is not gluten-free.

    Yummy! I haven’t made cornbread in a while, but this is convincing me that I really need to!

    I had your blog for this month’s SRC – I had such a difficult time deciding what to make! I ended up choosing a variation of your spiced cherry tart (but instead used Saskatoon berries) and your almond cornmeal crust! They were quite tasty! You have such a beautiful blog and it was really a pleasure looking thorough it! I love how you have so many “me friendly” recipes. Take care!

    Mmmm, not only looks delicious but it tastes fantastic!! Have made it several times now, I like to mix it up; Added onions and garlic instead of corn kernels and it was amazing and also omitted the rice syrup. Thank you for the recipe!

I took this video on Jan 1. I even wrote a caption I took this video on Jan 1. I even wrote a caption and everything. And I intended to post it that day as a reflection moving into a new year. But instead, mom and I went out for pizza and wine, and then it was Jan 2, and so on and so on.

So instead you’re getting it on Feb 1. A new day and another new month (but what is a new month or a new year, other than a societal convention really).

Because, each day, each sunrise, we have the opportunity to start anew - no matter how big or little that start may be. A chance to take another step forward - no matter how many steps back you feel you’re fighting against.

Whether this past year brought blinding joy or paralysing grief (and in whatever measure of balance or imbalance), I hope each new day sees the landscape of your life look one step closer to what you imagine it to be. And that when the waves roll in and change that landscape, you can roll with it and see the beauty and possibility on the other side.

When the middle little insisted on buying quail eggs over Christmas, but due to allll the other food we never cooked them, I simply couldn’t let the little guys go to waste.

Could I have made one dish? Of course. Did I instead prepare quail eggs four ways, bake mini loaves of brioche, make mini waffles, dig through the prop closet for the smallest dishes, and set up an entire table? Of course I did.

My go-to pizza topping combo 🍕 Made on that dou My go-to pizza topping combo 🍕 Made on that dough from a couple weeks ago and voiced by the middle little (who is about as different from her younger sister as you can get!) 💥.

Sometimes this combo gets prawns too 🍤. Most of the time I don’t bother mixing the ingredients in a bowl and just layer them on top. The cheese is a hard goat cheese (because I can’t do 🐄). The ‘spices’ 🌱 is Sicilian oregano. The measurements are random at best - a handful of this, a splash of that.

If you have a fave veggie or seafood pizza combo I’d love to hear it. Because as Ms.S says, voila, yummy yummy pizza!
