Summer Cantaloupe, Cucumber & Mint Green Juice

I once had a boss who gave a hard time to anyone answering the question “how are you?” with the word “busy“. It didn’t stop any of us from defaulting to it anyway, but it did make you think about how often it is offered up as a reply or an excuse.

Why? Are we all looking for sympathy? Or acknowledgement? Or is it simply easier than any of the alternatives answers?

Who knows. But lately I’ve been head-down-bum-up, had lots of bits-and-pieces-on-the-go, lots of balls-in-the-air… You get the point, in short I’m busy, but I guess it’s better than the alternative.

So the interest of my sanity and the fact that everyone else is busy too, I’ll keep this short with another celebration of late-summer fruit and vegetables.

The fact that the ingredients appearing in this juice are suspiciously similar to the ones in the salad from earlier in the week is not lost, however they were made at entirely different times over the past month. Not particularly hard to tell where my head and shopping habits are right now…

Summer Cantaloupe, Cucumber & Mint Green Juice

13-02-06_CucMelonJuiceA green juice celebrating summer, this would work with any melon, herb and citrus combo that tickles your fancy.

Serves: 1 – multiply as required.

INGREDIENTS:

  • cantaloupe [rockmelon], cubed
  • cucumber, chopped
  • handful fresh mint
  • fresh lemon juice
  • ice cubes, optional

METHOD:

Blend all ingredients until smooth, or put through a juicer.

Garnish with lemon, mint and a fancy straw, because fancy straws make everything better.

*COOK’S NOTES:

  • Make sure your ingredients are well chilled if you like cold juices. Freeze the melon cubes first for a thicker smoothie-esque consistency.
  • I don’t have a juicer and use a hand-help immersion blender for pretty much everything.
  • You could peel the cucumber, I didn’t.

    This is timely for me. I was just wondering this morning if I could put cucumber in juice. Apparently I can : ). Looks lovely & fresh. Do you think if would work as well with pineapple?

      Definitely! Pineapple and mint is great, the cucumber would pair well with it. I did a strawberry one too that is languishing in my ‘to post at some point’ folder!

    I sadly often say, busy when asked that question, other typical answer is ‘I’m fine’ which offer up just as much insight.

    I tried this recipe yesterday…I bopped it in the juicer and out came a delicious, refreshing juice! one of my favorite recipes yet and will become a staple juice around my house. In order to juice the mint decently, I had to shove it in between the cantaloupe.
