Seriously? How cool is magic shell? It starts all liquid-y then BAM it's frozen and shatter-y the minute it hits anything frozen. The stuff from the grocery store has all sorts of crap in it of course, but you can make it at home with just two (or three) pantry staples. As these two versions were used to coat Pumpkin Pie Ice Cream Bars (stay tuned for the recipe tomorrow!) I left them un-sweetened and the slightly bitter edge paired brilliantly with the ice cream, but if you … [Read more...]
Vegan Roasted Garlic Cashew Aioli plus 6 flavour variations!
I never liked mayo. It was viscous and oddly sweet, unnecessary tasteless fat when there were plenty of other perfectly good red and yellow condiments in the centre of the table. I grew up thinking mayo had dairy in it, seriously. It was the the mid-80s and 90's in suburban America-land, before the days of labels screaming 'whole-egg' and way before every sandwich shop and restaurant started smearing aioli on everything in sight. I remember the first time I tasted real aioli, funny … [Read more...]
Cape Cod Kale Salad
Salad is a simple act. A few fresh vegetables washed in cool water. A sharp knife slicing effortlessly through crisp leaves. A tangy dressing thrown together with what's on hand. The first bite is refreshing after days of excess. The second is calming and reassuring. A return to clean simplicity, shared with family over the sound of old stories, squealing children and end of summer breezes. I probably should have made another batch for the second half of our trip … [Read more...]
Moroccan Quinoa, Avocado & Orange Salad
I mentioned in my last post that I'd received a crate of oranges recently, and rather than just eating one each day I challenged myself to do something different with them all. I was so pleasantly surprised with some of the combos I came up with and this salad was one of my faves. Fruit in salad can freak me out a bit - perhaps too many years of bad 90's raspberry vinaigrette has scarred me for life - but oranges are a great way to add a bit of a sweet/tart bite to winter … [Read more...]
Rocket, Parsley & Pepita Pesto
Necessity is the mother of invention and this pesto is the result of a last ditch rescue mission in my crisper. There are a few of those happening lately. A Spaghetti Squash - more on that later - purchased from the same stand as those tomatillos, steamed up. A couple of frozen mackerel filets, pan fried. And the pesto, blended together in the blink of an eye. Fridge surprise lunch at its best. Rocket, Parsley & Pepita Pesto Rather than letting yet another couple bunches … [Read more...]
Quinoa Fried Rice
A twist on a classic, a fridge surprise, leftover magic... Call it what you will this creation is one of my favourite ways to use quinoa. Truth be told it's one of my favourite ways to use pretty much anything. Clearing out the crisper has been quite a trend round these parts lately and it's bound to continue. The good thing about re-inventing leftovers is that they cease to be tired and simply become an entirely new meal. How terribly convenient. Tell me, what is your top tip to … [Read more...]
White Winter Soup
The good news is I don't have pleurisy. While the thought lives just fine on it's own as a daily positive affirmation statement it may be best if explain a bit further... First some background, I am not a fan of doctors [sorry doctors], hospitals freak me out and I am not one prone to hypochondria. The last time I was in a hospital was 11-ish years ago and in general I am one of those people who will soak gushing kitchen injuries in salt water and bandage with a tight band-aid before ever … [Read more...]
