Huh, well it seems that between a Pumpkin Upside-Down Cake last week and a twist on Egg-Nog this week I've unintentionally set the scene for Christmas in July. How terribly festive of me (or more appropriately what a terribly appropriate response to my perpetual complaining about how cold I am...). Maybe I should have convinced RJ to let me leave the tree up for another month. So how did I come to make a concoction named Apple-Nog (or Not-Egg-Nog as I've been affectionately calling it) … [Read more...]
Lemon, Coconut & Passionfruit Popsicles
When one makes bowls and bowls of meringue and swiss meringue buttercream for a completely insane cake, one is left with a container of egg yolks. And when one is left with a container of egg yolks one has little other option than to make lemon curd (obviously). Now I could have stopped there and eaten lemon curd on all the things for days and that would have been ok with me... But there was also an enormous bag of passionfruit on the bench from a recent media … [Read more...]
Decadent Dark Chocolate Mousse
Let it be known that roughly once a week since January my husband has asked for chocolate mousse. Let it also be known that roughly once since January I week I rolled my eyes and ignored his pleas. But the man is nothing if not quick on his feet and a few weeks ago a fly on the wall overheard a conversation that went something like this... J - what kind of cake do you want for your birthday? R - can I pick anything? J - sure R - I want that chocolate mousse that my mate Manu made for … [Read more...]
Pear, Macadamia & Coconut Baked Oatmeal
It's no secret that I'm a bit of a porridge fan. I've been known to eat it for dinner as often as I do for breakfast -- because anytime is a good time for porridge if you ask me. RJ however won't touch it with a ten-foot pole, well not in the cook-on-the-stove-eat-with-a-spoon form at least... However, I've just discovered that if I bake it into a cake-like slice, all bets are off. How very sneaky convenient. I stumbled across this fragrant pan of inspiration over on Rebekah's blog, … [Read more...]
Fruit Smash Toast
This isn't a real recipe, not really. But that doesn't make it any less perfect as an instant meal solution. You see I'm a huge fan of stuff on toast. It's a quick and easy fix for pretty much any time of day -- but that certainly doesn't mean it needs to be boring. The toast in this instance is sourdough but it could be any number of other base loaves, as gluten-full or gluten-free as you wish. The key is that it's sliced, toasted and topped -- in this instance with fruit, … [Read more...]
Egg, Salmon & Goat Cheese Baked Mushrooms
It's an established fact that I'm just a bit obsessed with brunch. It's also well documented that I'm a mushroom pusher from way back. And from the photos on this post I've quite possibly revealed how the story ends before it's even started... But if you skip the awards show and head straight to the party you'll miss the best ideas ever on how to get your daily Vitamin D, and that would be such a shame. So lets talk for a moment about Vitamin D, ok? Great. The mighty D is a vitamin … [Read more...]
Gluten-Free & Vegan Banana Bread Pancakes
It's nearing the end of yet another month (what? WHAT? sigh.) and that means it's time once again for Secret Recipe Club! *applause, applause* Oh thank you, thank you. No, no, please take your seats, there will be plenty of time to cheer later. And why, pray tell will there be cheering later? Well this month my SRC assignment was Feed Me Seymour, a delicious little corner of the internet created by Kim -- a food editor based in Annapolis -- and once again I was spoilt for … [Read more...]
