Angel food cake is one of those desserts that instantly brings back memories of my childhood. Soft and fluffy, topped with berries, baked for no good reason at all (like one needs a reason to bake a cake, but you know what I mean), and cooled upside down for what seemed to be the longest.time.ever in little kid minutes. Multi-layered chocolate was the go-to that appeared at birthdays, but angel food was a cake my mother started baking when I was a baby to use up all the egg whites that … [Read more...]
Nectarine & Almond Streusel Baked French Toast Casserole
Santa came to our house a day early when I was growing up. Mom said it was because he knew we drove to my grandmother's farm on Christmas Eve day so he stopped at our place first, ensuring the presents were ready and waiting on the morning of December 24. We'd wake up early, collecting stockings from the staircase on our way down to the tree, eat baked french toast for breakfast, pack, pile into the car and for the next 8 hours -- over the river and through the woods, obviously -- to … [Read more...]
Caramel Pumpkin Upside-Down Cake
There's a story somewhere in my head about life turning upside-down. It may be a story about the decisions you make that lead to life swerving left instead of right, and left ends up being so very right. Or perhaps a story about the decisions that life makes for you while it dances around like an obnoxious frat boy singing lalalala and holding its fingers in its ears, ignoring your instance that this was not-in-the-plan, even if there was no real plan to speak of. I have all … [Read more...]
In My Kitchen: July 2015
It’s once again time for In My Kitchen and as per usual this is a collection of things from the past month — a small snippet of those seen over on Instagram — in loosely interpreted categories and no particular order… As always I’m linking up with Celia for IMK. ------ Kitchen Shenanigans Willy Wonka eat your heart out (aka this is what happens when I say I'll make the cake for the MIL's 80th b-day). For those keeping score it was made up of 2 layers coconut cake, 2 layers … [Read more...]
Kumquat Upside-down Tea Cake and a Virtual Morning Tea Party
Hi, thanks for popping over! Grab a cuppa and a seat, morning tea will be ready shortly. If you're located anywhere in Australia you'll know that Australia's Biggest Morning Tea is once again in full swing. And if you've been around here before you'll probably know that I've been a big supporter of the Cancer Council's annual fundraising campaign for quite a while. It's a cause pretty close to my heart. The event, held throughout May and June each year, puts Australia's morning tea … [Read more...]
Wholewheat Pear & Blueberry Muffins for Mother’s Day
A letter to my Mom on Mother's Day 2015. Hi Mommy! I miss you. You remember a few weeks back when we were in the midst of one of our usual slightly-random-but-filled-with-pretty-things conversations and you said "I've been feeling like you're really far away lately"? Well something caught in my throat because I'd been thinking the same thing only a day earlier, even though we talk all the time. Of course those calls are great but it's the telepathy across the world moments that make … [Read more...]
Vegan Cream Cheese Frosting (or Cheesecake Frosting, if you insist)
I've done it again haven't I? Teased you with a cake and promised frosting, then made you wait a week for the recipe. I had every intention on sharing this a few days ago, but then another cake happened. It happens. There is every chance this icing recipe may look a bit familiar, perhaps a bit like Vegan Cheesecake... But what is Cream Cheese Frosting if not cheesecake spread over cake -- am I right? In any case don't question it, just make it. Then try not to eat it all … [Read more...]
