From the moment I knew I'd be bringing you another recipe as part of the Australian Mushroom Growers Summer Mushrooms campaign I had a plan to make mushroom falafel. Light, nourishing bites with a mushroom and smokey paprika umami hit. Creamy lemon tahini sauce. Crunchy iceberg lettuce and spicy radishes.
