Spelt Plum Cake

So yesterday was one of those days where you just want to pack it all in. Why am I doing this again? and why isn't anything going right? and just plain grrrrrrrr. Apparently I can’t boil water. I can make a mean cake, bake beautiful bread, create a mad curry paste and turn pretty much anything healthy [except this insanity, I don't want to even try to turn this healthy, I want to undo 4 months of healthy to sit on the kitchen floor and eat the entire pan with a big glass of milk], but what happens when I boil water….this: oops. So the final recipe testing is ramped up and I'm churning out final Mixes and packaging-artwork-worthy goods! Spent most of the afternoon on Monday mixing and measuring and tweaking and baking and cleaning it all up afterward….and oh to have a test kitchen like this one, and an assistant to clean up after it all. Smells like summer
