When one makes bowls and bowls of meringue and swiss meringue buttercream for a completely insane cake, one is left with a container of egg yolks.
And when one is left with a container of egg yolks one has little other option than to make lemon curd (obviously).
Now I could have stopped there and eaten lemon curd on all the things for days and that would have been ok with me…
But there was also an enormous bag of passionfruit on the bench from a recent media lunch, and little goes together as well as passionfruit and lemon.
Coconut was a logical third tropical layer (as well as a perfect excuse for a coconut yoghurt experiment) and a quick freezer clean-out later these popsicles were born.
Now because it’s winter I’ve been eating them sitting in front of the heater while wearing a cashmere jumper and fleece pants — but if it’s summer where you live, eating these while sitting in the sun is highly recommended.
Note to self, find summer, make more popsicles.
Lemon, Coconut & Passionfruit Popsicles
A little bit sweet and a little bit tart (because all the best things are).
Makes 10 popsicles using ¼ c classic popsicle moulds
INGREDIENTS
- 1 c lemon curd or vegan lemon custard
- 1 c coconut yoghurt or yoghurt of choice
- 1 tsp vanilla paste
- ¾ c passionfruit pulp
METHOD
Let’s be serious they’re popsicles with three ingredients, just combine the yoghurt and vanilla then layer everything in popsicle moulds and freeze. But if you want all the details here they are…
Make lemon curd and cool completely. Combine coconut yoghurt and vanilla paste, add a splash of maple syrup or honey if you wish.
Drop a generous spoonful of lemon curd into popsicle moulds. Top with a drizzle of passionfruit pulp followed by a generous spoonful of yoghurt.
Continue to layer lemon >> passionfruit >> yoghurt, finishing off the top of each popsicle with a good layer of passionfruit.
Freeze at least 4 hours or over night, dip moulds in cold water before removing popsicles.
COOK’S NOTES
- I use these popsicle moulds but any will do, the combo would be great in ice pop tubes too.
- Instead of coconut yoghurt you can use coconut cream or coconut milk, natural or vanilla dairy yoghurt, or even softened vanilla ice cream.

If you find summer can you send it to WA too please! The weather channel doesn’t seem to agree with me, but I think this winter has been the coldest for years! I had ice on my car!!!!!!!!! That doesn’t happen!
But these make summer seem closer. I can just see myself, sitting on the alfresco eating one of these and trying to get my daughter to lick hers before it melts every where.
They look so fresh, I can almost taste the tropical taste! Have you seen the trend for putting a popsicle in a large wine glass and then adding champagne??? How good would these be like that!!!!

Hello! I’ve popped over to seruse your blog as I’m doing a shoot of smoothies for a photography course I am doing. You really do make lovely images. My cat keeps pulling the tablecloths all over the place… and I just relaied I should have ironed the backdrop cloth. Sigh!
