The other day I gave you all sorts of ways to add veggies to your breakfast bowl, now it’s time to put some of those ideas into action.
I’m a big believer that rainbows always win and breakfast bowls are no different.
Bright swirls of pumpkin and beetroot puree pack a veggie punch, while kiwi and blueberries add a colourful tang.
You could certainly apply these topping combos to a bowl of yoghurt and muesli, or even flakes if that’s your thing, but oatmeal porridge is my go-to more days than not so that’s where I started. Let me know if you give this one a go!
Rainbows always win, and a rainbow swirly breakfast bowl is no exception. INGREDIENTS METHOD Combine oats, chia, water or milk and a generous sprinkle of cinnamon in a saucepan. Bring to the boil then remove from heat, set aside for 5 mins. Thin with additional liquid if desired. Tip porridge into a bowl, dollop on pumpkin and beetroot purees and swirl with a chopstick.
