Seriously? How cool is magic shell? It starts all liquid-y then BAM it’s frozen and shatter-y the minute it hits anything frozen.
The stuff from the grocery store has all sorts of crap in it of course, but you can make it at home with just two (or three) pantry staples.
As these two versions were used to coat Pumpkin Pie Ice Cream Bars (stay tuned for the recipe tomorrow!) I left them un-sweetened and the slightly bitter edge paired brilliantly with the ice cream, but if you wanted to make them sweeter simply add a bit of syrup as listed in the recipes.
In other news I now want to top everything with Magic Shell… I may need an intervention.
Vegan Chocolate Magic Shell
Chocolatey and rich, sweeten the mixture as little as possible (or not at all), remembering that it will be drizzled over a sweet ice cream.
INGREDIENTS
- 1/4 c coconut oil, melted
- 2 Tbsp cocoa powder or raw cacao
- 1 – 2 Tbsp rice syrup, maple syrup or honey (not vegan), optional
METHOD
Mix oil and cacoa until smooth. Gently warm sweetener and stir in if using.
Dip ice cream bars into shell or drizzle over top. Magic Shell will harden on contact with the frozen ice cream.
COOK’S NOTES
- Keeping the layer thin will prevent it from lifting off of your ice cream bars.
- If it is cold in your kitchen place the bowl of melted magic shell over another bowl of hot water — you can use this method to melt the oil and sweetener when mixing it together too.

Vegan Green Goo Magic Shell
Tasted on its own you can detect both coconut and green tea, but when drizzled over ice cream it just turns into a brilliant green crunchy coating perfect for Halloween or St Paddy’s Day.

- 1/2 tsp matcha green tea powder
- 1 – 2 Tbsp rice syrup, maple syrup or honey (not vegan), optional
