3-Ingredient Oatmeal Chocolate Chip Emergency Cookies

Sometimes you just need a cookie. It’s a sentiment which seems to be a common theme around here these days — although it’s not quite as opinionated or parenthesised this time, ahem.

These little morsles have made many an appearance on Instagram over the years, generally in a fit of irritation over something or other, occasionally for dinner, and very unfairly with nary a recipe to be seen.

Of course this is almost to be expected for something with the word “emergency” in its name. As when I make them it’s usually at the end of a long day, in poor evening light, and with a serious lack of patience to style, much less photograph, anything.

However a few weeks back my mind decided my stomach must have cookies for breakfast, and as it was a day before flying out to Cambodia it took about three seconds to convince myself it was far more important to shoot a recipe video than pack. Lucky you.

If your attention span is closer to 53 seconds than a minute and a half (you know who you are) there’s a shortened version of the video over on Instagram. If you want to share it with everyone you know it’s on Facebook too — because everyone has an emergency cookie kind of day from time to time.

3-Ingredient Oatmeal Chocolate Chip Emergency Cookies

3-Ingredient Oatmeal Chocolate Chip Emergency CookiesBecause sometimes you need-a-cookie-right-now to calm the crazy.

INGREDIENTS

  • 1 cup rolled oats
  • 1 large ripe pear (approx 1 cup grated)
  • 50 g dark 70% chocolate
  • pinch sea salt, optional
  • two pinches cinnamon, optional

METHOD

Preheat oven to 180°C / 350°F, line a cookie sheet with baking paper.

Grate or mash pear. Chop chocolate as coarsely or finely as you’d like.

Combine oats, pear, salt and cinnamon and mix until a dough is formed. Stir through chocolate. Scoop onto lined tray and flatten slightly if you wish, cookies will not spread in the oven.

Bake 10 mins until just golden and firm. Cool on tray 1 min, move to cool completely on a rack. Eat standing up at counter. Make another batch for anyone else who may have wanted one but wasn’t fast enough.

COOK’S NOTES

  • Pear can be replaced with 1 cup mashed ripe banana.
  • Add sweetener if you wish, add more or less chocolate or use chips if that’s your thing — same for more or less spice. Replace chocolate with dried fruit if you’re that person, add a spoonful of nut butter or tahini.
  • Don’t tell me these don’t taste like your mom’s oatmeal cookies that take three times longer and three times the ingredients, if you want those make those. (Sorry, I may need a cookie.)
