So the final recipe testing is ramped up and I’m churning out final Mixes and packaging-artwork-worthy goods! Spent most of the afternoon on Monday mixing and measuring and tweaking and baking and cleaning it all up afterward….and oh to have a test kitchen like this one, and an assistant to clean up after it all. Watch out Martha, I’m coming. It may take a bit but I’m coming. [hey, someone’s gotta dream big!]
So the amazing thing about baking is that small changes can have such a huge impact. Good news is that we finally have a brilliant Chocolate CupCake Mix! I sucked it up and tested 4 separate recipes at once rather than the calm pacing technique I have been using – it yielded 4 dozen very delicious batches – but all very different and only one that I was happy with the batter and the cake!
One batch was more like an inverted CupCake – great if you want to fill it with fresh raspberries and cream, not so good for traditional cupcakes.
One batch was a lovely cake [yep, putting this one in my recipe book for later] but the batter was more like chocolate soup….I nearly threw it out but decided to bake it just in case and couldn’t believe how nice it ended up. To confusing though for a Mix.
One batch was undecided on whether it was going to sink or rise – we don’t do indecision here, so it got fired [and not even photographed, horrors] even though it tasted great.
And one was perfect. Nice thick batter, nice rise, no sunk centre, and lovely cake. #WINNING [yep, I just jumped on that bandwagon].
OatmealApricot and ChocChip Cookies got one last test too.
Then the best of the bunch queued up for their photoshoot. It’s not all champagne and high-heels this whole modeling thing [that comes later!].
Many thanks to those who took the samples off my hands so I didn’t have to eat them all! There will be more coming up over the next couple weeks – ‘like’ our facebook page to get the notifications and claim some for yourself! Sorry America-land, they don’t mail well but next visit I promise to bake for you, as long as I can borrow your kitchen and make you clean it up :).
