Raw Choc-Chip Cookie Dough Truffles
Truth be told, you really can't go wrong with chocolate chip cookie dough. Of course there will be an argumentative few who shake their fists and insist this is not proper cookie dough and to them I say pshaw -- go on and eat your raw eggs and raw flour, if you need me I'll be watching from the corner with a cup of tea and a pile of cookie dough truffles. These babies were made for a bake sale late last year and took pride of place alongside those Lemon, Macadamia & Coconut Raw … [Read more...]
Spelt Angel Food Cake
Angel food cake is one of those desserts that instantly brings back memories of my childhood. Soft and fluffy, topped with berries, baked for no good reason at all (like one needs a reason to bake a cake, but you know what I mean), and cooled upside down for what seemed to be the longest.time.ever in little kid minutes. Multi-layered chocolate was the go-to that appeared at birthdays, but angel food was a cake my mother started baking when I was a baby to use up all the egg whites that … [Read more...]

Nectarine & Almond Streusel Baked French Toast Casserole

Mom said it was because he knew we drove to my grandmother's farm on Christmas Eve day so he stopped at our place first, ensuring the presents were ready and waiting on the morning of December 24. We'd wake up early, collecting stockings from the staircase on our way down to the tree, eat baked french toast for breakfast, pack, pile into the car and for the next 8 hours -- over the river and through the woods, obviously -- to … [Read more...]
Hickory Smoked Turkey Legs
I know, I know, I don't post anything for weeks then here I am, BAM, with two posts in one day. However as it happened, I had this one all ready to go when I decided that I simply must do a post on brining -- including ratios if your turkey isn't the size of a small child -- before sharing the recipe for the turkey that was brined. Of course, as all things do these days, it took a bit longer than planned. And so we return to our regularly scheduled programming, joining the story a few … [Read more...]
How to Brine a Turkey – plus Brine Recipe Ratios for any size bird
If you've never brined a turkey before roasting now is the time to start. No, no, not next year, now -- or at the very least the next time you cook anything remotely turkey related. Because once you do you'll never go back, seriously. Ok, ok, how can I be so sure? Well only a few weeks ago I was you, well not really you, that would be impossible and a little awkward, but the non-brine-er part of you who is questioning my blatant confidence. You see for years I'd intended to try this … [Read more...]
