Baked Coffee Doughnuts

I’m no stranger to waking up to the intoxicating smell of coffee. Growing up, the coffee pot was burbling away each morning before anyone was even out of bed, and both my parents drank it by the bucket.

I however, other than a brief dalliance in collage involving late-night study-driven coffee consumption tarted up with copious amounts of milk and sugar, never joined club-coffee.

Of course there has always been an affinity for coffee ice cream and tiramisu (seeing a trend?) — but when it comes to hot beverages in a mug my hard core tea habit is well know round these parts.

But not drinking coffee certainly doesn’t exclude me from baking and cooking with it, so when Harris Coffee approached me about creating a coffee recipe my mind started ticking over.

I’ve done chocolate and coffee (then did it again) and it’s always a winning combination, but there in a little corner of my mind was a niggling memory of a discovery from Adelaide… Who knew black coffee was so lovely when each sip was paired with a bite of a sugared doughnut. Did I mention this was a very dangerous discovery? And so Coffee Doughnuts began to percolate away (see what I did there?).

First I made mini ones and took them to a craft evening. At one point while standing next to a table piled high with baked goods someone pointed to the lone remaining mini and said “have you tried the coffee doughnuts, they are so good!” I giggled and mentioned I certainly had tried them and that I may have made them.

I must admit, these are even better than that first trial batch.

Harris Coffee has been roasting and blending beans on-site in their Sydney headquarters for over 130 years. Their master blender has been with the company for 15+ years and tastes over 80 cups of coffee a day — I bet he could use a doughnut.

Baked Coffee Doughnuts

In other news, fancy pan equals fancy doughnuts — because while you could certainly make these in a muffin tin, a ruffled doughnut is the perfect excuse to eat cake for breakfast. Everybody wins.

Baked Coffee Doughnuts

Baked Coffee DoughnutsThese baked doughnuts are so easy to whip up you could even make them before your morning cup of coffee… Or at the very least at the same time. For an extra treat dip doughnuts into a steaming cup of coffee or hot chocolate. Thank me later, or even better, invite me over for doughnuts.

Makes 12, multiply recipe as necessary

INGREDIENTS

  • ¼ c rapadura, coconut or panela sugar, packed
  • ¼ c coconut oil, melted
  • 1 tsp vanilla extract
  • 1 egg
  • ½ c strong coffee, room temp
  • 1 c whole spelt flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt
  • 1 Tbsp raw or rapadura sugar, extra

METHOD

Preheat oven to 180°C (350°F). Wipe a 12-hole doughnut tin with a bit of coconut oil. Spread extra sugar on a small plate.

Whisk sugar and oil together in a large bowl. Whisk in egg and vanilla for 30 seconds or so until thick. Whisk in coffee. Sift over dry ingredients and whisk until smooth.

Scrape into a piping bag or a large measuring jug with a spout. Pour or pipe into tin, dividing evenly among the 12 doughnut moulds.

Bake approximately 8 minutes until a toothpick comes out clean. Remove from tin immediately and press both sides into plate of sugar (asbestos fingers help with this one…), use raw sugar for obvious crystals, rapadura for a more refined dusting.

Cool and serve. Dip into a cup of coffee or hot chocolate if you wish.

COOK’S NOTES

  • In a plunger stir 1 cup just-boiled water with 2 Tbsp coffee grounds. Steep 4 minutes then pour coffee off and discard grounds. Drink half the coffee and make doughnuts with the other half, or make a double batch of doughnuts. It’s win-win really.

    My favorite way to enjoy my morning caffeine hit is ALWAYS with my lovely hubby… Whether it’s warming our frozen, winter-bitten fingers in our cold car during our morning commute or while discussing life’s little mysteries on our weekend, mid-morning walks.     What an interesting recipe! I’ve only ever made doughnuts once and found it labor intensive. I think the ones I made were fried, not baked, so it was also rather messy (and less healthy!) Additionally, I don’t drink coffee… I’m a tea drinker.

    However, I’m really intrigued by this recipe. Particularly that it’s made with coconut oil, and that it it so fast to make! I’ve always wanted to make doughnuts again, but have yet to get around to it… perhaps I will start with this recipe. It looks delicious…!

    This is a gorgeous post JJ. I love doughnuts in any way, shape or form but I’ve actually never made them at home (shock! Horror!). I think your recipe would be a great place to start!! I am very picky when it comes to my morning coffee. I do love a good, milky cup to start the day but it has to be when I have time to enjoy every drop (preferably on weekends, in the fresh air with something delicious). I think I need to buy a plunger. And make these super awesome doughnuts. Thanks for the recipe! xx

    Every morning I wake to my crochet, my chair by the front window where the warm morning sun wakes me and my freshly brewed pot of strong sweet coffee. I have been doing this now for a year and it’s such a quiet, relaxing way to start my day before the wee ones wake up and chaos is let loose ????

    I love my coffee with a shake of cinnamon instead of sugar – it tricks the tastebuds into registering sweetness, and kickstarts your digestive system at the beginning of the day. Not to mention, it tastes great!

    One of the main reasons I visit your blog (besides the amazing recipes) are the artistic photos! So gorgeous, much wow 🙂 My current routine is to to blitz/blend my coffee with coconut ice-cream and vanilla syrup. And with pfeffernusse cookies 😀

I took this video on Jan 1. I even wrote a caption I took this video on Jan 1. I even wrote a caption and everything. And I intended to post it that day as a reflection moving into a new year. But instead, mom and I went out for pizza and wine, and then it was Jan 2, and so on and so on.

So instead you’re getting it on Feb 1. A new day and another new month (but what is a new month or a new year, other than a societal convention really).

Because, each day, each sunrise, we have the opportunity to start anew - no matter how big or little that start may be. A chance to take another step forward - no matter how many steps back you feel you’re fighting against.

Whether this past year brought blinding joy or paralysing grief (and in whatever measure of balance or imbalance), I hope each new day sees the landscape of your life look one step closer to what you imagine it to be. And that when the waves roll in and change that landscape, you can roll with it and see the beauty and possibility on the other side.

When the middle little insisted on buying quail eggs over Christmas, but due to allll the other food we never cooked them, I simply couldn’t let the little guys go to waste.

My go-to pizza topping combo 🍕 Made on that dou My go-to pizza topping combo 🍕 Made on that dough from a couple weeks ago and voiced by the middle little (who is about as different from her younger sister as you can get!) 💥.

Sometimes this combo gets prawns too 🍤. Most of the time I don’t bother mixing the ingredients in a bowl and just layer them on top. The cheese is a hard goat cheese (because I can’t do 🐄).
