If overlooking the beach and air-kissing with the beautiful people of Sydney sounds like the perfect way to ease into another week this one’s for you.
Thanks to the 2013 Aperol Spritz Sunset Sessions — at Icebergs during November and Watsons Bay Hotel December through March — you can chill out each Sunday through the silly season from 4pm until late.
The Bondi Sunset Sessions feature beats from some of Sydney’s hottest DJ’s including Andy Webb, Valerie Yum and Kali, and of course the breathtaking views one comes to expect from Icebergs.
Then again if a backyard bbq is more your Sunday speed than makeup and heels, you can always mix up your own batch of cocktails and air kiss the weekend away closer to home. I’ll bring the burgers.
Aperol Spritz
Aperol is an Italian aperitivo made with bitter orange and other aromatics. It is a bit like Campari but lighter in both alcohol and intensity of flavour. Adapted from Aperol.
INGREDIENTS
- glass full of ice cubes
- 2 oz Aperol
- 3 oz Prosecco or other sparkling wine
- 1 – 3 oz club soda / soda water / seltzer
- orange slices and green olives, to garnish
METHOD
In glass of your choice pour Aperol over ice, followed by Prosecco then soda. Garnish and serve with a straw. Stir gently before drinking to combine all ingredients.

Aperol spritz is one of my favourite drinks ever. We used to have them in Italy long before they became popular in the UK – it’s so nice that aperol is now recognised and available to buy everywhere!

I was only ever familiar with Campari but Aperol certainly makes for a festive summer drink!
