Fig, Fetta, Tahini & Thyme – an Almost Recipe

I don’t create recipes the same way I post them. I think in arrows and chicken scratch and abbreviations. I have to make sure I write down oven temps and final cooking times and recipe titles or I’d end up with a pile of papers containing a list of ingredients and little else.

But some things just don’t need proper recipes or quantities or detailed instructions. A quick photo, a few simple ingredients and maybe a note or two will suffice.

As I regularly post dishes on Facebook via Instagram with a description of what went into the soup/salad/sandwich/etc, I figured that I may as well take it one step further and post here too.

Get in mah belly.

And so with that I’ve decided to share an occasional Almost Recipe with you.

A list of ingredients, most likely without measurements. A few photos, possibly taken on my phone. A brief explanation, at times in the form of a rambling fairy-dance story. It’s like a pick and mix really – all colour and plastic scoops and paper bags and occasional sharing. Leave your pennies at the counter on the way out.

Without any further ado a quick snack inspired by a container of sweet figs and a package of salty fetta, because that’s how I roll.

Fig, Fetta, Tahini & Thyme

13-01-25_FigFettaTahiniThymeThis combination pushes all my buttons – sweet, salty, soft and crunchy. I enjoyed it as an afternoon snack but it will do just fine any time of day.

INGREDIENTS:

  • tahini
  • fresh figs
  • greek fetta
  • picked thyme leaves
  • brown rice cake, but you can use any other base including bread – or even salad leaves
  • honey, optional

METHOD:

Spread base with tahini. You could make this without it but why would you?

Cut figs into 6 or 8 wedges – you can quickly caramelize them in a hot pan with a bit of coconut oil, but it’s not necessary.

Layer figs, fetta and thyme on base.

Drizzle top with honey if using.

gluten free // nut free // refined sugar free // vegetarian // soy free

    And you’re right! I would see this for brunch, and also as an entrée, yum!
    Although I think i would make this as a canapé but on a smaller rice cake (for fear or cracking and falling everywhere but mainly just because i love canapés. 🙂

    I am so glad you posted this. I loved seeing it on instagram but it is not the same as seeing it on the big screen. I love this almost recipe, it would make such a satisfying lunch 🙂

    Figs are in season at the moment and I always have those rice crackers in the cupboard and there’s an enormous jar of tahini in the fridge so I really ought to give this a try xx

Toasted sourdough, goat chèvre (or vegan cream cheese), sliced strawberries, cucumber ribbons, fresh mint, olive oil, black pepper, just a pinch of salt. Go forth and feast.

I took this video on Jan 1. I even wrote a caption I took this video on Jan 1. I even wrote a caption and everything. And I intended to post it that day as a reflection moving into a new year. But instead, mom and I went out for pizza and wine, and then it was Jan 2, and so on and so on.

So instead you’re getting it on Feb 1. A new day and another new month (but what is a new month or a new year, other than a societal convention really).

Because, each day, each sunrise, we have the opportunity to start anew - no matter how big or little that start may be. A chance to take another step forward - no matter how many steps back you feel you’re fighting against.

Whether this past year brought blinding joy or paralysing grief (and in whatever measure of balance or imbalance), I hope each new day sees the landscape of your life look one step closer to what you imagine it to be. And that when the waves roll in and change that landscape, you can roll with it and see the beauty and possibility on the other side.

If you’ve made it this far, congratulations, have a cookie 🍪 And I’ll leave you with the rolling waves and blue sky of a California beach in January. I truly hope this year sees us all grow stronger and move forward with each new day. Going backwards is simply not an option.

When the middle little insisted on buying quail eggs over Christmas, but due to allll the other food we never cooked them, I simply couldn’t let the little guys go to waste.

Could I have made one dish? Of course. Did I instead prepare quail eggs four ways, bake mini loaves of brioche, make mini waffles, dig through the prop closet for the smallest dishes, and set up an entire table? Of course I did.

My go-to pizza topping combo 🍕 Made on that dou My go-to pizza topping combo 🍕 Made on that dough from a couple weeks ago and voiced by the middle little (who is about as different from her younger sister as you can get!) 💥.

Sometimes this combo gets prawns too 🍤. Most of the time I don’t bother mixing the ingredients in a bowl and just layer them on top. The cheese is a hard goat cheese (because I can’t do 🐄). The ‘spices’ 🌱 is Sicilian oregano. The measurements are random at best - a handful of this, a splash of that.

If you have a fave veggie or seafood pizza combo I’d love to hear it. Because as Ms.S says, voila, yummy yummy pizza!
