Buttered Peas & Avocado on Toast

They were a spur of the moment purchase at the farmers’ market. A bag of peas in the shell, sitting just next to the scale.

The peas (along with some broccoli and cucumbers) went into a satchel — and then subsequently sat in the fridge, looking at me every time I opened it to grab something else.

It wasn’t until I started shelling them a day or two later that I realised fresh peas need almost nothing else to make them special.

A pea and feta smash was in consideration for a moment but I didn’t feel like feta and I didn’t think mashing them was quite appropriate. It was when I spied the avocado that I knew what had to be done.

Simple ingredients, treated simply — simply perfect.

Apparently Instagram thought it was pretty perfect too, so I figured this was the ideal recipe to start an “As Seen on Instagram” feature. 

If you’re not familiar with my Instagram feed, it tends to be a combination of peeks into my day, recipes I’m developing or photographing for clients, a bit of faffing, and plates or bowls of whatever I managed to scrounge out of the fridge and cobble together into some semblance of a meal.

Every now and then I’ll share something bound for or posted on the blog, but most things don’t make it any further than IG  — because a quick phone snap or two is all that is managed before the meal is consumed and I get back to work.

Re-making a dish another day to photograph it properly sounds all well and good, but in reality it rarely happens… So from this point on a worthy recipe with a worthy Instagram pic may well end up getting promoted to the big kids table (aka this here blog), perhaps even with an outtake or two if they happen to be on the phone.

Buttered Peas & Avocado on Toast

Buttered Peas & Avocado on ToastSimple spring ingredients, treated simply. How very perfect.

INGREDIENTS

  • two handfuls fresh peas
  • spoonful vegan butter or regular butter
  • half an avocado
  • lemon juice, maybe a teaspoon
  • 2 slices sourdough, or gluten-free bread
  • sea salt and freshly cracked black pepper

METHOD

Toast bread. Mash avocado with lemon juice and spread over toast.

Over medium heat gently simmer peas in just a splash of water, cooking for a few minutes until peas are tender and liquid has all but evaporated. Add butter and toss to combine.

Spoon peas over avocado and season with a pinch of salt and pepper.

COOK’S NOTES

  • You can use frozen and thawed peas if you must but there is something terribly special about freshly shelled new-season peas.

    One of my most favourite things in the whole world. peas. i would starve without them in my life. i have never had them with avocado. that must be corrected.
